Best Brown Rice




Some people dislike the "earthy " taste of plain brown rice. I did too untill I discovered short grain brown rice. It is chewy and a little sweet, I think it is much more flavorful than the long grain variety. This recipe is based on a pilaf style rice. You can use butter instead of the earth balance or even olive oil. I like to use better than bouillon for the broth but any bouillon or broth would do. Some times I soak the rice for a feww hours in the cooking water before begining this recipe, but you do not have to.

1 Cup short grain brown rice
2 Cups chicken broth
1 Tablespoon Earth Balance


Add all to the pan and bring to a boil. Then cover your pan and put temp on medium low and simmer for about an hour until all the liquid is absorbed.

Turkey Soup

Please do not throw away the turkey bones. They make the most delicious and easy broth. After you cut away most of the large pieces of meat that you want, put all the turkey bones into a large stock pot. Fill the pot with water and simmer on the stove for 3 to 4 hours.Then let it cool a bit. Next strain out the bones and cover the stock and refrigerate until tomorrow. Put the bones in another pan and put that in the fridge too. The next day, skim off the fat that has collected on the broth. Add whatever veggies you would like and season to taste simmer this for about one hour. Next pick the remaining meat off the bones and add to broth. I like to cook a pot of rice and then just put some rice in a soup bowl and top with the broth. This is so good and easy!!!!!!!!

Oregon Chai






Another review here. I know these pics aren't great but I am learning. I recently requested a sample of Oregon Chai--you can visit them at oreganchai.com. They sent me a one cup sample and a dollar off coupon .I thing these are on sale at Whole Foods right now 2 for $4. Anyway, this was delicious just as good, maybe better than what you would get at a coffee shop. I put the sample in a large mug added hot water and then topped it off with some milk to cool it down a bit. It was mildly spicy and sweet, perfect for a cold fall day. Try some!!!

Sunshine Burgers

Today I decided to write a small review . I don't know about you but I try not to eat many animal products and when I don't, I sometimes like to have a veggie burger. Sometimes I make my own but often it is just so easy to grab a package in the frozen foods section. Most of these burgers are delicious but have soy in them. I try to limit my processed soy intake and stick with tofu or tempeh, so i was looking for a soy free burger and saw these sunshine burgers on sale at Whole Foods. I had one for lunch today and is was great.I tried the barbecue flavor . It was smokey and sweet , the texture was mildly firm and not mushy as some veggie burgers are. I was in a hurry so I heated it up in the microwave. I hope you try these burgers soon!

Mahi-Mahi


Many people hesitate to try mahi-mahi because they think it is a dolphin. In fact although the common name is dolphin-fish , the mahi-mahi is not a dolphin. It is commonly eaten in Hawaii. My husband and I honeymooned there and i discovered this wondeful,mild white fish. It seemed like it was on every menu of every restaurant we visited. My husband jokes that I ate some every day at one meal or another. He may be right I remember having it for breakfast with my eggs and fried on a sandwich at lunch. Back in the states I rarely found this fish at the market. Recently i discovered it with the flash frozen fish at Trader Joes. We have this recipe often. Enjoy!


Mahi-Mahi


Ingredients

1 pound mahi-mahi or any mild white fish fillets
2 cups frozen artichoke hearts
1 seeded and chopped red pepper
1 small onion peeled and chopped
2 garlic cloves peeled and minced
2 tablespoons of canola oil
flour for dredging
dash of oregano
2 tablespoons of lemon juice
Black pepper

Directions

Wash and pat dry fish fillets. Dredge in flour. On medium heat add 1 tablespoon of oil to saute pan. Cook fish 3 minutes on each side untill golden brown. Remove fish and keep warm. Add 1 tablespoon of oil to pan. Scrape pan to get up the brown bits. On medium heat add onions atrichokes,red pepper and garlic. Saute until tender. Add lemon juice and sprinle with oregano and black pepper. Plate fish and top with veggies.

Sweet and Spicy Greens

4 cups of greens (I like collards)
chopped and cooked
4 slices of bacon
diced
1 smalll onion
3 Tablespoons Maple Syrup
3 Dashes Tabasco


Add bacon to saute pan on medium heat. When the bacon is releasing its fat add onions. Saute until soft , add greens , maple syrup and tabasco. Saute until heated throughout

This is another very simple but tasty and healthy recipe. I like to use collards,but you can use kale,chard or spinach. I have even used frozen spinach and it is very tasty!

Creamy Butternut Squash Puree

1 Whole Butternut Squash
peeled,seeded,cubed
2 Ripe Anjou Pears
peeled,cored,cubed
1 Medium Onion
peeled and diced
4 Tablespoons Unsalted Butter

Melt butter in saute pan. On med/low heat add rest of ingredients. Saute until everything is soft. Puree with a stick blender or in a food processor.


This is a very simple recipe that tastes much more complex considering its simple ingredients. Try this ,I am sure this will be included often in your fall repertoire of squash recipes!
