Mahi-Mahi

Many people hesitate to try mahi-mahi because they think it is a dolphin. In fact although the common name is dolphin-fish , the mahi-mahi is not a dolphin. It is commonly eaten in Hawaii. My husband and I honeymooned there and i discovered this wondeful, mild white fish. It seemed like it was on every menu of every restaurant we visited. My husband jokes that I ate some every day at one meal or another. He may be right I remember having it for breakfast with my eggs and fried on a sandwich at lunch. Back in the states I rarely found this fish at the market. Recently i discovered it with the flash frozen fish at Trader Joes. We have this recipe often. Enjoy!
